Ingredients:
  • 450 g
    Dried White Beans
  • 450 g
Pork Shoulder (boneless, cut into 1-inch cubes)
  • 225 g
    Bacon (thick-cut, chopped)
  • 4 pcs
    Sausage (sliced)
  • 1 pcs
    Onion (large, diced)
  • 4 cloves
    Garlic (minced)
  • 2 pcs
    Carrot (diced)
  • 2 pcs
    Celery Stalks (diced)
  • 1 can
    Tomatoes (diced, 14 ounces)
  • 2 cup
    Chicken Broth
  • 2 pcs
    Bay Leaves
  • 1 tbsp
    Thyme Leaves
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
Directions:
  • 1
Rinse the dried beans under cold water and soak them overnight. Drain and set aside.
  • 2
In a large Dutch oven or heavy-bottomed pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.
  • 3
Add the cubed pork shoulder to the pot and brown on all sides. Remove the pork and set aside.
  • 4
In the same pot, add the sliced sausages and cook until browned. Remove the sausages and set aside.
  • 5
Add the diced onion, minced garlic, diced carrots, and diced celery to the pot. Sauté until the vegetables are tender and fragrant.
  • 6
Return the bacon, pork, and sausages to the pot. Add the soaked beans, diced tomatoes, chicken or vegetable broth, bay leaves, and thyme leaves. Season with salt and black pepper.
  • 7
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beans are tender and the flavors have melded together.
  • 8
Remove the bay leaves and adjust the seasoning if needed.
  • 9
Serve the Cassoulet hot, garnished with fresh parsley.
