Ingredients:

    Chicken (cooked and shredded chicken - or your preferred filling)
  • 1 cup
    Cheese (shredded cheddar, Monterey Jack, or a blend)
  • 1/2 cup
    Onion (diced)
  • 1/2 cup
    Bell Peppers (diced)
  • 1 cup
    Enchilada Sauce
  • 1/2 cup
    Sour Cream
  • 2 tbsp
    Vegetable Oil
  • 1 tsp
    Chili Powder
  • 1/2 tsp
    Cumin
  • Salt and Pepper to taste
  • Optional toppings: chopped cilantro, diced tomatoes, sliced jalapeños
